암모늄을 써서 만드는데, 이 과정에서 이 딸려 생긴다. 국제암연구소는 이 물질을 발암 가능(2B)으로 분류했다.

콜라·간장·갈색 소스의 색이 대개 III이나 IV다. 미국 캘리포니아는 함량에 따라 표시하게 한다.
