A curing agent and preservative that keeps ham, sausage and bacon pink and suppresses botulinum bacteria.
In the body
Can react with amines during high-heat cooking or in stomach acid to form nitrosamines.
Watch out for
IARC classifies processed meat as a Group 1 carcinogen. Eating less processed meat and not charring it are the standing recommendations.
