Definition
The sodium salt of glutamic acid, the amino acid behind umami. Naturally present in kelp, tomatoes and cheese.
In the body
Breaks down in the body into glutamate and sodium. Its sodium content is about one third that of salt.
Watch out for
Both the Korean MFDS and the WHO judge it safe. Foods that use MSG usually run high in sodium anyway, so read the sodium line alongside it.
