물을 잡아 식감을 좋게 한다

햄·어묵·냉동식품이 퍽퍽해지지 않게 물을 붙잡는다. 인이 들어오는데, 첨가물 형태의 인은 음식에 원래 든 인과 달리 거의 100% 흡수된다.

콩팥이 안 좋다면 특히 조심할 항목이다. 고기 무게를 늘리는 데도 쓴다.
