잼을 굳히고 걸쭉하게 만든다

사과와 감귤 껍질에 든 수용성 다. 소화되지 않고 장에서 물을 머금어 죽처럼 되며, 당과 콜레스테롤이 흡수되는 속도를 늦춘다.

첨가물로 분류되지만 하는 일은 식이섬유다. 좋은 쪽에 가깝다.
