A white powder made by partly hydrolyzing starch. Used as a filler, for powdering, and to improve texture.

Breaks down quickly into glucose, giving it a glycemic index higher than sugar (about 85–105).
Watch out for
It does not show up on the sugars line, so a powdered product listed at 0 sugars can still raise blood sugar.
