Casein (sodium caseinate)
Definition
The protein that makes up about 80% of milk protein. Sodium caseinate is used as an emulsifier in coffee creamer and processed cheese.
In the body
Digests slowly, supplying amino acids over a long period. Contains almost no lactose.
Watch out for
Milk allergy (to the protein) and lactose intolerance are different things. A non-dairy creamer containing sodium caseinate must be avoided with a milk allergy.
