Definition
The seed of a plant in the knotweed family. Used like a grain, but botanically unrelated to wheat or rice.
In the body
A notable allergen in Korea and Japan; severe reactions (anaphylaxis) to small amounts are reported. Reactions can come not only from eating it but from inhaling buckwheat-hull pillows or flour.
Watch out for
Found in naengmyeon, makguksu, soba, buckwheat pancakes, buckwheat tea and some bread and pancake mixes. Some restaurants cook udon in the same water used for soba.
