Definition
A family of preservatives and bleaching agents that prevent oxidation, browning and microbial growth. Includes sulfur dioxide, sodium sulfite and potassium metabisulfite.
In the body
Strictly a hypersensitivity rather than an immune allergy. It is on the labeling list because it causes breathing difficulty and bronchospasm in some people with asthma. Hives and abdominal pain are also reported.
Watch out for
Used in wine, dried fruit (apricot, mango), shrimp, processed potato, vinegar, juice and gelatin. Declared when it remains in the final product under labeling rules.
